Ingredients 

Pancake Batter

  • 1 cup Gluten-Free Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Ground Cinnamon
  • ½ teaspoon Salt
  • 1 cup Milk (dairy or non-dairy)
  • 1 Egg
  • 2 tablespoon Maple Syrup
  • 1 teaspoon Vanilla Extract
  • 1 Apple peeled and grated

Instructions 

  1. In a mixing bowl, whisk together the gluten-free flour, baking powder, ground cinnamon, and salt.
  2. In another bowl, mix the milk, egg, maple syrup, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the grated apple.
  4. Heat a griddle or skillet over medium heat and lightly grease it. Pour ¼ cup of batter for each pancake onto the griddle.
  5. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  6. Serve warm with additional maple syrup, if desired.
