Ingredients

Blintz Batter

  • 1 cup gluten-free flour
  • 1 cup milk
  • 2 eggs large
  • 2 tablespoon butter melted
  • 1 teaspoon sugar
  • ¼ teaspoon salt

Cheese Filling

  • 1 cup ricotta cheese
  • ¼ cup cream cheese softened
  • 2 tablespoon sugar
  • 1 teaspoon vanilla extract

Instructions

  1. In a mixing bowl, whisk together the gluten-free flour, milk, eggs, melted butter, sugar, and salt until smooth. Let the batter rest for 10 minutes.
  2. Heat a skillet over medium heat and lightly grease it. Pour about ¼ cup of batter into the skillet, swirling to coat the bottom. Cook until the edges start to lift and the bottom is golden, about 1-2 minutes. Flip and cook for another 30 seconds. Remove and set aside. Repeat with remaining batter.
  3. In another bowl, mix together the ricotta cheese, cream cheese, sugar, and vanilla extract until smooth.
  4. Place a spoonful of the cheese filling in the center of each blintz. Fold the sides over the filling, then fold the top and bottom to enclose the filling.
  5. Heat the skillet again and lightly grease it. Cook the filled blintzes seam-side down until golden brown, about 2-3 minutes per side. Serve warm.
