Chile Verde Chicken Stew Recipe

Main Ingredients
- 1 lb Chicken thighs, boneless and skinless
- 1 cup Chicken broth
- 1 cup Tomatillos, chopped
- 1 cup Green chilies, chopped
- 1 medium Onion, chopped
- 2 cloves Garlic, minced
- 1 teaspoon Ground cumin
- 1 teaspoon Salt
- 1 tablespoon Olive oil
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and garlic, sauté until soft.
3. Add chicken thighs, cook until browned.
4. Add tomatillos, green chilies, cumin, and salt. Stir well.
5. Pour in chicken broth, bring to a boil.
6. Reduce heat, cover, and simmer for 30 minutes.
7. Use a blender to puree the stew to desired consistency.
8. Serve hot.
