Filling
- 4 cups rhubarb, chopped
- 1 cup sugar
- 3 tablespoons cornstarch
- 1 teaspoon vanilla extract
Crust
- 2 cups gluten-free flour
- 1 cup butter, cold and cubed
- 1 teaspoon salt
- 1 tablespoon sugar
- 6 tablespoons ice water
Preheat your oven to 425°F (220°C).
In a large mixing bowl, combine rhubarb, sugar, cornstarch, and vanilla extract. Set aside.
In another bowl, mix gluten-free flour, salt, and sugar. Cut in the cold butter until the mixture resembles coarse crumbs.
Add ice water, one tablespoon at a time, until the dough comes together. Divide the dough in half and roll out each half on a floured surface.
Place one rolled-out dough into the pie dish. Pour the rhubarb mixture into the crust. Cover with the second rolled-out dough. Seal and flute the edges.
Cut slits in the top crust to allow steam to escape. Bake for 50 minutes or until the crust is golden brown.
Let the pie cool before serving.
