Ingredients 

Main Ingredients

  • 1 medium cauliflower, cut into florets
  • 1 can chickpeas, drained and rinsed
  • 2 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • ¼ cup chopped fresh parsley
  • ¼ cup crumbled feta cheese (optional)
  • 1 Juice of 1 lemon

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss cauliflower florets and chickpeas with olive oil, cumin, paprika, salt, and pepper.
  3. Spread on a baking sheet and roast for 25 minutes, until golden and crispy.
  4. In a mixing bowl, combine roasted cauliflower and chickpeas with parsley, feta (if using), and lemon juice.
  5. Serve warm or at room temperature.
